So almost two weeks later and no reboot for me, I'm pretty sure in most cases it's a driver issue of some sort.
For me turning off integrated graphics and preventing windows to update it was the solution.
Here's a copy of the AMD technician response,including the procedure to fix it, hope that helps:

I reviewed dxdiag report and see that you are using computer equipped with AMD A10-7850K APU with Radeon RX 480 discrete graphics card running
on windows 10 (64 bit) operating system.
I found that your R7 integrated graphics is also being detected on your computer. I request you to please disabled the integrated graphics from
the BIOS. Please refer the motherboard manual regarding this.
As you mentioned that the issue only persists when you performed the windows update. Then there might be chances that windows also pushing the
driver update for your graphics card and overwriting the current driver which result to such issues.
Could you please do me favor and perform the below troubleshooting steps and let me know the issue status?
First, I request you to download and install the Windows Show or Hide updates tool and run it and follow the instructions to hide display driver
updates from the list.

After preventing windows to install the driver automatically, I request you to please follow the below steps.
- Step 1 – Please use
DDU Utility (Display Driver Uninstaller) by launching it in Safe mode and uninstall the previous driver. It will help you completely uninstall
AMD graphics card drivers and packages from your system, without leaving leftovers behind.
- Step 2 – then restart your computer again and enter into the normal windows mode.
- Step 3 - install all the critical and recommended updates from Windows.
- Step 4 – Again restart the computer and then install the 17.12.1 drivers by clicking this below link.
Please disconnect the network connection and disable antivirus before running the installer file.

I can't remember why but I think I didn't do the show/hide update thingn it didn't work since i disabled
