Is there any way that we can prevent dictate to turn off (or at least extend the time that it stays on) in Word 365? I'd really like for it not to stop listening while I'm thinking about what to say.

I have stopped using Word dictation because of this and am now using Dragon Naturally Speaking for dictation into Word. It works great and stays on until I click it off.
it does not switch off after a few minutes, but more like 3 seconds, which makes the dictate function useless
It's terrible. I'm having the same problem. I'd like to write my book with this. Fat chance. It's beyond frustrating to undertaken all the voice training in Word only to discover that it switches off whenever you pause to think. Useless.
Please make this a Windows feature. The dictation app auto turns off and it would be a lot better if there was an option to always stay on.
No resolution, Charles. The dictate function is, as you say, pretty nearly useless. I only use it if I know exactly what I want to say in advance. And, even then, I rarely use it.
