Client has Office Home and Business 2021 installed and just recently because of issues with her contacts not syncing over to the desktop client had to install Google Workspace Sync for Microsoft Outlook. Everything for that went smoothly and is working. However she went to set her email signature and was able to save it and set it up for New Messages and Forwards/Replies, however she closed out of Outlook and went back the next day and had to set the signature for New Messages and Forward/Replies again in order for it to work. Each time she closes Outlook the next day she has to set it again and it will work just fine after that until she closes Outlook. Any suggestions?

This solved the problem for me.
(Clearly an issue with Google Workspace accounts and roaming profiles)
I've also been experiencing this issue, some digging points to it being an issue roaming signatures.
The workaround is to disable roaming signatures via the Windows registry by adding the following key -
- Open Windows registry editor
- Navigate to HKEY_CURRENT_USER\Software\Microsoft\Office\16.0\Outlook\Setup
- Right click and add new DWORD 32bit value called DisableRoamingSignaturesTemporaryToggle
- Double click this DWORD and change the value to 1 (hex or decimal doesn't matter)
- Restart Outlook
Have attached an image of the Registry Editor after completing the above steps for reference.

It is not the full solution. This does NOT work for key activated versions of Microsoft 365 tied to Google Workspace. Please read the thread before touting resolution.

Do you have another email account added to Outlook 2021 besides the Google Workspace account? If you do, is that other account manifesting the same issue with signatures?
Also, have you tried logging in to your Google Workspace account using a web browser instead of the Outlook app and see if the same issue occurs?
If the same signature issue occurs in the Google Workspace account while using a web browser suggests an issue with the account itself. If the issue does not occur while using a web browser though, the next step to take is to re-install Office 2021 using the steps below and see if that fixes the issue.

We understand that you're experiencing issues with Outlook 2021 not saving signature settings for New Messages & Forwards/Replies for the Google Workspace account you added to it. Apparently, when the signature is configured and saved in Outlook, it's forgotten after the is closed and relaunched. It's as if the signature was never saved and now you have to start again.
That's a very uncomfortable situation to be in thus I truly hope with my help we can work together to get past this issue.
So, just to be clear, a signature was added using the steps from the guide below?
If the those were the steps used to add a signature, please try the following steps to resolve this.
If the issue still persists, please repair Office 2021 using the steps in the link below.
