Edge has been updated and it's causing issues with highlighting and copy/paste from a web form field. I tested this on 3 different PCs. The issue presents itself with Edge version: Version 131.0.2903.51 (Official build) (64-bit). 2 of my PCs were updated to that version and do not work. The PC that is still on the older version of Edge 130.0.2849.80 (Official build) (64-bit) still works. Rolled a browser on a PC having the issue back to Edge 130.0.2849.80 and the problem went away. Anyon else having this issue?

Highlighting actually still works, you just can't "see" it. If you attempt to highlight text, control-C then go to another field/application and control-V, the information is copied as expected.
This happened in January also and Edge and Chrome reportedly pulled back the offending code. It's back now so either they have to roll back or the website has to implement a workaround. It's a stylesheet issue - workaround I've seen is to add
body::selection { background-color: revert !important; }
to your stylesheet, if you own the application.

Can confirm the issue arises after upgrading to the version mentioned in the start post. I've also tried working around the issue with plugins which perform add-ons to the selection, but none of them give a visible selection. Strangely enough it's not with all text. Maybe a CSS id which triggers it?
