I installed Office 2016 as an upgrade to 2013. Put the color scheme on grey (because annoyingly the awesome Black went away sometime in the preview.)
Now I have a weird issue where every time I close all of the 2016 applications and then reopen one of the applications, the theme has changed from grey to colorful. This applies to reboots or just closing them all and then later opening one back up. Oddly as well today (10/5/2015) I walked away from the computer to talk to a co-worker in the next office. When I came back, it was on colorful again. However that is the only time it has changed itself while open.
It seems to work correctly when it is set to Grey. So for instance, say I open Outlook and change the theme to Grey. When I open Word or Excel, they are also Grey as they should be.
So I'm just throwing that out there as a potential bug

I also see this problem in Windows 7, but not in Windows 10.

I want mine to stay white, also, because in white the icon colors show. I wouldn't mind so much if the other themes allowed the icon colors to be visible.
What's up with that? Microsoft, don't you get that icons are supposed to provide visual information?

I was having the issue and I found that when I opened up Outlook and clicked on File ---> Office Account (using Windows 10, Office 365 account), I noticed that it said there was a problem with my Office account on my PC and it had a "Fix It" button. Once I clicked that and logged in with my company credentials, my Office account was fixed and once I set my colors back to black, it has held my colors ever since. Now when I open up Outlook or Word, I no longer have to go back into the Options and change my colors. I know that changing the colors every time you log in is a pain in the you know what so try this and see if that fixes your issue.
Spontaneous color scheme changing. That is a problem I have not heard of.
Do you notice any pattern to the switch? If you don't, pay attention and try to identify what is happening around the time the problem happens. When you identify the situation that triggers the problem, then we have a better chance of suggesting a fix.
Is always falling back to the same one?
Does the fall back always happen after restarting the computer?
Next time you have the problem, Just for the "halibut"
try this. Restart the computer, then use "run as admin" to start an Office application, change to the desired color, then shut down the application normally and restart the computer normally (don't just hit the power switch!), See if the change "sticks".
