You can change the theme in Office by clicking File > Account page in any Office product with the exception of Outlook. In Outlook, Click File > Office Account to change the theme.

There are three themes available in Office 2013:

White - Default

Light Gray

Dark Gray

    Given that several years of complaints have not generated a solution, I am not hopeful, but I would like to add my name to this of those that are dissatisfied with the limited themes available in Office 2013.  Microsoft really dropped the ball on this one.

    Thank you for the feedback on Office’s new look. We are actively collecting, sorting and reading through feedback on Office 2013’s design and User Experience. As the audience for Office 2013 grows, we are being mindful of patterns and pain points that emerge from user feedback. While we do not have any additional Themes planned at this time, it is an issue we are watching very closely.

    Seriously, when is Microsoft going to do something about this? How hard can it be?

    I wish I could get refunded. I'm using openoffice until Microsoft starts caring about user satisfaction.

    If you have seen the latest release of Skype, you know that this type of theme is the direction Microsoft has decided to take. Hundreds of complaints mean nothing to them. Too bad for those of us who WERE loyal to Microsoft.

    Jennie if your internal people can't see how awful the themes are in Office 2013 compared with 2010 then there really is no hope. It is SO boring and bland and therefore extremely difficult to work with. I'm going back to Outlook 2010 until such time as Microsoft wakes up and smells the coffee. One would think that there would be more theme choices in Office 2013, not fewer. I guess Microsoft is running out of steam and having captured the market doesn't feel it is necessary to make much of an effort.
