Using classic Outlook for Windows in business environments

I don't like it, I don't want it, I am not going to switch to it, and I never want to see it again. For the longest time it would periodically switch to the new outlook, I would turn it off, and submit feedback stating the previous. Now it auto opens every single time. I do not ever want to see the new outlook again for the rest of my life. Do not make me switch to Mac or Linux or whatever because I am petty and will eventually become so disgruntled and delete everything Microsoft and never spend another dime on anything they make over something stupid. I want to know a way to permanently delete the new outlook off my system so it doesn't get to that point.

Thank you. I made all the changes I could selecting Outlook (old or classic) wherever possible. There were some setttings for which Outlook (new) was the only option as the old outlook did not appear.
I don't have any problem with that development philosophy but, dang, they make it so difficult to eliminate the new stuff in deference to the old, classic, way.
To wit, it seems like every day I get a notification and a popup window that says Microsoft Copilot was installed and ready to "help" me do what it is that it knows I want to do. I uninstall it and, for some reason, it always reinstalls it.
Sometimes I wish IBM-OS had won the fight back in the day but I am sure IBM would have been just as intrusive as is Microsoft..
That is not the way it works. Yes, I can start Outlook Classic and it works fine. however, if I send and email form within a website, the default Outlook is new.
That is fine. However, every time I send an email from within a website or accept an invitiation with an outlook file, Outlook (new) starts.
