The existing Outlook app for Windows has a setting to prevent calendar invites from being automatically sent to Deleted Items* when you accept them. Is this setting available in New Outlook?
Microsoft just announced that starting in 2024, the new Outlook will be the "official" one. I'm really concerned that features like this may be ignored when trying to reach feature parity. So, Is there an official feature request page for this? They exist for other Microsoft products I use, but I didn't find one dedicated to the New Outlook.

*Deleted Items is the wrong choice even if I wanted this! Archive would be the smarter location for a modern email didn't. (But the best thing would be too simply not do actions the user didn't request!) Thanks again.

I have been very frustrated with the inability to disable the auto-deletion of Meeting Invitations, but found a work-around that I thought I would share.
You can create a "Quick Step" in the toolbar of "New" Outlook. I did the following:
Name of Quick Step: "Meetings"
Choose an action: "Copy to" and created a new folder called "Meetings"
Now when an invitation comes through, I hit the quick step button and it sends a copy of the invitation to the "Meetings" folder. I can then respond to the meeting, which causes it to auto-delete. Then I go into the Meetings folder and drag the meeting invitation to the actual folder I want it in.
Very cumbersome, and seems silly that this issue hasn't been fixed in development, but it is working for me at this point.

2024-09-24T14:41:49+00:00 Admission that this is a mistake in 2023- it's now September 2024 and still Outlook inexplicably deletes my invite emails (including the link!) when I accept!
That's deleting the emails I want most! What brainless developer thought of this idea? Is it supposed to be that we all use the calendar so religiously that in their infinite wisdom, Microsoft devs have decided that we don't need to keep certain emails?
How about I write the rules by which Satya Nadella will manage his email? No? Surprise!
One of the first replies had it right - "Or, Microsoft could stop making it do things I haven't requested."
That pretty much says it all.
It's not a feature, it's a bug. Now get to work and fix it.

(unfortunately, it seems that at the moment there is not a way how to set this behavior - strange choice to omit this option..)

2024-04-08T10:07:10+00:00 Unbelievable that this has not been fixed, given it was reported last year. As plenty of other people have said, emails with invitations to meetings often contain the agenda, background docs & relevant info. It is ridiculous to have that binned without warning and to force users to go off to the recycle bin and fish it back out every time. Is anyone at Microsoft listening to users, and is anyone there willing to pull their finger out, or at least give an update?
