Using Outlook for Android in business environments for email and scheduling
I am having the same issue on Pixel 6 pro with updated apps.

I noticed that all my calendars were gone in the Android calendar app and found the reason is, for some reason, the option to sync calendars for my outlook.com account has been turned off in the Outlook app. I turn it back on and within minutes my calendars are populated again, but then hours later it gets turned off again. This started happening in the past few weeks.
Anyone else having this problem?

Yes, same here, having problem since last update 31 march
This problem has nothing to do with pin vs password. One of my accounts is an outlook.com personal account. The sync was working fine for the past couple years and started having problems a few weeks ago.
I am in the same boat. Turned it to "Unrestricted" and hoping this is a bandage until a more thorough fixed comes out in an update. I don't remember changing it ever so I don't know if a recent update made a change to the battery setting. However, it was on "Optimize" when I checked and I use Outlook regularly enough that it shouldn't be put "asleep" as the syncing is set to push. Will report back tomorrow.
Just reporting back. "Unrestricted" setting had no affect. Sync still disables and needs to manually be turned back on. No bandage for the interim.
Having the same issue
Google pixel 7 pro.
Using the Google calendar app
Outlook app keeps turning sync calendars off.
Manually turn them on. Works for a while, then turns off again.
Please fix Microsoft.
