I have sent items on my phone that does not appear on my sent items in Outlook in desktop. I tried to look for configuration for sent items in the app, same thing with the desktop where you can set Outlook to save sent items, but I couldn't find any.

Thanks for the note. I’ve switched to Spark as Microsoft has no intention to actually look at the issue. Spark is a great app has all the same features.
L found the best solution. Convert to spark email.
Not so easy when you have a year of IOS Outlook email sent on your iPhone that you want to keep. Only wish I had caught this sooner. Forwarding the messages as suggested (huge amount of work combing through and finding only the missing ones) would mean that searching by date would be useless.

Same issue here. Frustrating.
I had to speak with a representative myself. They got me hooked up to my Outlook desktop app, but still no 'sent' folder in the outlook phone app, even deleting IMAP account and re-adding it a couple of times. This is frustrating. Also, the Outlook server is slow from my desktop app. Other email platforms quicker to update and push email through. You would think Microsoft would have this one figured out and maintained.
