How do I scan multiple pages as a PDF file in Windows 11?

Since updating to Windows 11, the only way I seem to be able to get my scanner to work is using Windows Scan. Unfortunately, I can't see any way to scan multiple pages into the PDF I am trying to create. I used to be able to do this using my scanner's functions but since updating to Windows 11, the scanner can't seem to connect to my PC via the scanner's buttons. Does anyone know a way around this?

Unfortunately my work's IT policies do not allow me to download a driver for my printer. I have to use Windows SCAN. Ugh. Can't use my document feeder because of where the printer is located. I can only use the flatbed (I don't scan a lot).

Using an Epson GT-S50 scanner that will scan both side paper. Latest MW doesn't provide the option for scanning both sides. Used Acrobat with the scanner itself set for both sides. Spending too much time trying to get some of the new gadgets to work.
