Epson scanner will not work with latest windows 10 update

My epson perfection v700 scanner (that allows me to scan photos, negatives, documents, etc.) and that I paid over $800 for) stopped working with teh latest update two days ago. I've downloaded a new driver and other software from Epson and it doesn't work. Can I uninstall this update? I like my scanner a whole lot more than I like Windows.

    So this is Kinda Weird as im not a techie at all  i have a Epsom workforce 3520 

    so im kinda frustrated with this Scanning issue as i have multiple page documents i desperately need to scan,

    So i open  Foxit reader  out of pure frustration, and  scan and i scan to my hearts content  6-7-8 page documents without any  issues at all  i save them into the folder i want on my pc  no issies

    the problem as i see it now with Windows and Epson  is    ...... saving the files  i can scan but   it wont saveit with Epsom,  but it will with foxit reader

    So   let the Teccies  work out why it works with foxit reader

    and if you need to scan documents   then download  Foxit reader

    Running as administrator worked for me on my 10+ year old Epson 4490. I can now also do other tasks like opening pictures and wandering the web while the scanner is running.  It only needs about 2% CPU of my i3 desktop, but would jump to 50% CPU when it locked up, usually within scanning a 35mm slide or two. Since running as administrator, I've done about 50 slides with no failure.

    Glad that works for you but I have an Epson XP-830 and both Photoshop Elements 2018 and Photoshop CS6 and your solution does not work.  I can "see" the 830 in both versions of Photoshop but cannot access any of the scanner settings other than dpi which only goes to 300, way too low (no histogram settings, no dust reduction, no output file type options, etc).  Still able to scan ok as administrator as long as I don't try to actively "run" another program.  By run I mean one that uses, I think, the CPU.  I can watch TV using a SiliconeDust tuner and browse the Web via Firefox just fine but if I try to manipulate an Excel spreadsheet or Word doc while scanning the scanner locks up.

    I have an Epson V500 scanner running on Win10 build 1803 with the same problem as many here.  I tried running as Administrator but no luck. I can make it work fine if I open an image editing program, in my case Photoshop Elements v7, and then

    File - Import - select Epson V500

    I can now access all the scanner driver features within Photoshop

    Epson v37 and v39 no longer will install.

    Deleted all Epson items on PC and cleaned registry with Epson tech on a HP win 10 laptop and win 10 desktop.

    Tried to clean install both and got 

    error occured during setup re start computer then try again"
