I didn't have a chance to take a look at the official website but tried Epson software updater which is includes into the suit.
You can reinstall the full package and update it online.

My epson perfection v700 scanner (that allows me to scan photos, negatives, documents, etc.) and that I paid over $800 for) stopped working with teh latest update two days ago. I've downloaded a new driver and other software from Epson and it doesn't work. Can I uninstall this update? I like my scanner a whole lot more than I like Windows.

Thanks Rolf. Do you have a link for this new driver? The Epson site still list the old 2013 driver 3.921. (Epson V700 Win 10 64 bit). Epson Updater only works for my printer and not my scanner.

Some have had success uninstalling and reinstalling their Epson drivers. Its quite possible that in the meantime Microsoft will supply a patch. If running as administrator does not work and you can't revert to a previous version of Windows, I would suggest the following.
Run Windows update to get the latest patches
Uninstall the Epson Derivers
Reboot
Download the latest drivers from Epson and reinstall and reboot.
Really, its in Epson's best interest to work with Microsoft to solve this issue as it will affect their customer happiness and sales.

we got an recent driver update 3.9.3.3 today. Hope that has fixed this issue already.
Don't hold your breath for an update from Epson to sort the issue of their scan software not working properly with Win 1803. As I mentioned earlier; one month ago Epson replied to me in an email that they were treating this issue as the highest level but after checking everyday in vain for an update I contacted them again asking how the update was going, the impression I got was that they had lost interest if fixing the issue and their advice was to simply reinstall everything and if that fails run the programme as administrator, both of which many people have tried and still found the scan not working.
In fairness running in Admin mode does seem to sort the issue out for some people (Right click the Epson scan icon on desktop and select "run as administrator", if you are lucky and this works for you set it to always run as admin and you are sorted.)
