I'm opening emails and Outlook and it is not being counted or accounted for in the rewards. As for this morning, I've opened up 6 /6 emails and none have been rewarded so it's still 0/ 3.

This is incorrect. Reading three emails in outlook is a daily task along the lines of doing three Bing searches. It might be regional, but this is a task that appears to have stopped working for a number of people today.
I have the exact same issue, and it looks like this issue just started happening today as of June 2nd, 2025. I think Microsoft Rewards is broken.
Actually in Outlook the option down at the bottom right says Rewards and after a very many days and then rewards me with a 1000.
So yes, when opening emails it does contribute.
Anybody else with the issue of their streaks going back down to zero? I don't know. It seems like they don't really want us to have those gift cards.
The same for me (2 June, 2025). I have opened like 7 emails, nothing!! I even tried Bing App (instead of Edge App), still sits at zero and does not make the streak. This problem happens VERY OFTEN, I am starting to think of just leaving it.
