My University just game me a provisional email for the brand new Microsoft account and informed me that I needed to change the password but I can't remember how to do it.

It has been a while and I am writing to see how things are going with this issue. Have you had a chance to check the replies provided? Any update would be appreciated.

For a work or school account, change a known password in either of these ways:

Go to myaccount.microsoft.com and sign in with the current university account password.
Select Change Password from the left pane.
Enter the old password, then enter and confirm the new password.
Select Submit. The password is changed, and sign-in is required again.

Another supported path:

Go to mysignins.microsoft.com/security-info/password/change.
Enter and confirm the new password.
Select Submit.

If the current password is not remembered, use the work or school password reset flow instead of the change-password flow. Start at https://mysignins.microsoft.com/security-info, select Can't access your account?, and follow the verification steps. If self-service reset is not enabled by the university, a Contact your administrator link appears instead.
