Using classic Outlook for Windows in business environments

I was able to reproduce the scenario on my side and successfully add a poll using Classic Outlook.

If the issue persists after completing the steps in the article, please proceed with the troubleshooting steps below:
- Open Outlook Classic Desktop.
- Select File > Options.
- Choose Customize Ribbon from the left pane.
- Under Choose commands from, select All Commands.
- Scroll through the list and locate Polls [Collect quick responses in email messages].
- On the right pane, select the tab where you would like the Poll button to appear, or create a New Tab.
- Select Polls [Collect quick responses in email messages], then click Add >>.
- Click OK to save the changes.
Note: If the Poll icon is present but grayed out, click into the body of your email draft. The button activates only when the message body is in focus.
