A few issues here -
First, MAK license is typically an upgraded license; it is not a full copy of Pro license. You can only use it to upgrade from Home to Pro, you cannot just clean install Pro edition and use MAK to activate. I just want to make sure, that you are absolutely certain that yours is the full copy.
Second, a Windows 10 MAK license cannot be used to activate Windows 11. It needs its own Windows 11 MAK key. Because you purchased the No Software Assurance version, unfortunately your account is not granted the Win 11 MAK key automatically. You will have to clean install it as Windows 10 in order to use your MAK license.
Third, S mode is ONLY for home edition, so I suspected that you did a factory reset perhaps, instead of clean install? Where did you see that it mentions S mode and Pro edition?
