How do I get deleted emails back after being hacked?

I was hacked yesterday, affecting both my outlook account and discord. My discord account itself if inaccessible as far as I can tell but I could get it back if the emails deleted by said hacker were brought back. I have no idea if they were deleted, from the deleted folder, or if they were just hidden somewhere. I already deleted the rules made and have followed every other step needed to clear out malicious settings and better security but I have made no progress on finding what’s lost. Would it be possible to roll back my email two days or am I just going to be stuck with no way to get my stuff back?
