Setting up future meetings with participants using Teams calendar or Outlook integration

From my research, "Hide attendee list" hides recipients from one another at the point the invitation is sent. Once an invitation has gone out, each recipient already holds a copy of the meeting item containing the attendee list, and enabling the setting afterwards cannot remove that information from copies already delivered.
A settings-only change of this kind also does not reliably generate a meeting update notification, which is why your attendees have not been notified. Even where an update is sent, it cannot erase attendee details already stored in the original invitation, in forwarded copies, in notifications, or in calendar caches.
For a meeting where attendee privacy genuinely matters, the dependable approach is to cancel the existing meeting, create a new one, enable Hide attendee list before adding attendees, and then send it.
While setting up the new meeting, it is also worth checking Meeting options > Participation > Hide attendee names, which is a separate setting controlling what attendees see in the participant list during the live meeting. Note that it must be chosen when initially scheduling, as it cannot be changed once saved, and it does not hide the names of invited people in the meeting details.
