I opened my onedrive app on my phone but I can now only see photo files, there is no obvious way to switch to see my files. How do I see my regular folders and files? Thank you.

I had same issue. Uninstall and re-install. All working now.

This is an issue of no useability people involved in the process of developing this app. Shame on Microsoft for such a poor implementation.

I solved my own problem because of one of the comments to the question. I had marked all my OneDrive files to be saved on the server instead of available on my local drive. Once I marked a few files to download to my computer, I had both of the tabs available on my phone, Files and Photos. Problem solved. This may not be the solution for everyone, but it worked for me.
