At some point in the last couple of days, the default +body/+headings font on my copy of Office 365 changed to the Aptos font. I honestly find it a bit hard to read, and I'd rather choose my default body font from a choice of whatever fonts I have installed. Failing that, I'd take Calibri again. The Aptos font reminds me a lot of
Since this affects all Office products, I can't say go into Outlook and change the stationery fonts; this doesn't impact the Reading Pane. It also wouldn't impact say Word, where I'd have to come up with my own document template to override the change. It doesn't seem to be a registry edit or template file edit, either. Is there a spot that the Aptos font can be changed?

Changing the Pasting from other programs to Merge Formatting seems to fix the pasting into Outlook issue.

Word and Outlook use the same Editor so that Cut, Copy & Paste act the same in both a new document or new message/reply.
So the same options that I described in previous post with all the screen snips are the same.
And, like Word, an Outlook paste operation -- whether via Ctrl+V, Ribbon menu button, or context menu -- will insert a button with drop-down at end of the pasted text:
which allows you to select whether the inserted text keeps the formatting (font, color, styling, etc -- which is the default as installed) or change the inserting text to use the destination formatting (you can also insert plain text or the object as an image -- such as Excel table or a signature with logo).
The drop-down also lets you set the Default Paste behavior which will take the Cut, copy and paste options ... which, again are identical to those is Word above. (Also accessed via File > Outlook Options > Mail > Editor Options > Advanced ...)
By default, all paste operations (Within same e-mail ... between e-mails ... from other programs:) are set to Keep Source Formatting EXCEPT for Pasting between e-mails when style definitions conflict: which is set to Use the Destination Style.
You either need to use the drop-down button after each paste to select how you want pasted text to be handled or change the default in the Editor Options
I am not using word, i am using outlook. how do i make it so that when i paste something it is in calibri?
I did the steps but the it will not let me "set as default".

Which application are you trying to customize and under which operating system? These things are important, as there are some significant differences between versions and platforms.
30+ year user of Office applications going back to pre-Outlook days when MS first bundled Word & Excel to compete against WordPerfect and Lotus 1-2-3.
Also a MS Partner that works with lots of small orgs including non-profits.
Formatting -- fonts, colors, styles, themes -- bites everyone including me still.
As Stefan Blom points out Copy/Paste issues are separate from MS changing default font from Calibri to Aptos in Office Theme.thmx.
Instead it is part of the myriad of settings and options for Copy/Cut/Paste and is different in different applications.
I just created a blank Word docx and when I go to paste text from here into the document via Home > Paste drop-down there are 5 paste options using each of the "clipboard" icons:"
Which are (left to right):
*AND*
Those options change depending on the top item in the Clipboard *AND* the source and destination of the item being pasted!
(e.g. if the first item on the Clipboard is an image then the only option is Picture.)
(**Remember that Win+V opens the Clipboard contents dialog)
The default Paste option (via Ctrl+V, context menu, etc.) is set via the "Set Default Paste ..." drop-down menu option (also available from Ribbon File > Options > Advanced) includes the "Cut, copy and paste" options (may have to scroll down to see all of them):

The 3rd one -- "Pasting between documents when style definitions conflict:" may be getting Caroline117 above.
Note that it mentions Style -- not Theme.
Also note the last item "Use smart cut and paste" and the "Settings..." button which opens this:

And this is all just in Word ...
I have not verified but Outlook, OneNote ... will handle these options differently
On a positive note, Word, Outlook and OneNote still seem to be handling Ctrl+V similarly and offering a Paste Options button with drop-down (see settting above) at end of pasted content:
Clicking the drop-down offers the same Paste Options as using the drop-down from Ribbon menus.
Ideally, in a larger org or department such settings, fonts, colors, styles, themes ... would all be standardized and implemented via unique Office Theme.thmx, template and setting files (differnt for each application Excel .XLTX in XLStart, Word .DOTX ...) either stored on a server or distributed with each installation of Office within the org/department.
With software that has been around this long there are countless options/features added over the many years ...
