At some point in the last couple of days, the default +body/+headings font on my copy of Office 365 changed to the Aptos font. I honestly find it a bit hard to read, and I'd rather choose my default body font from a choice of whatever fonts I have installed. Failing that, I'd take Calibri again. The Aptos font reminds me a lot of
Since this affects all Office products, I can't say go into Outlook and change the stationery fonts; this doesn't impact the Reading Pane. It also wouldn't impact say Word, where I'd have to come up with my own document template to override the change. It doesn't seem to be a registry edit or template file edit, either. Is there a spot that the Aptos font can be changed?

I agree with all the people who dislike the look of the Aptos font. If I copy and paste text, it comes in as Aptos. I change it to Calibri. Why Microsoft chose to make this change and not allow users to simply choose the font they want to use as default is beyond me.
This is why I hate Microsoft and all its products. I didn't ASK for this change -- and the absurd default paragraph spacing -- and it seriously pisses me off to have it imposed on me.
This was not a problem that needed solving. Microsoft has now created a huge problem for our company. And now we have to communicate how to keep resetting our defaults back to Calibri with every single office update. Why would you do this? Put it back to Calibri!

Formatting -- fonts, colors, styles, themes -- bites everyone including me still.
As Stefan Blom points out Copy/Paste issues are separate from MS changing default font from Calibri to Aptos in Office Theme.thmx.
Instead it is part of the myriad of settings and options for Copy/Cut/Paste and is different in different applications.
I just created a blank Word docx and when I go to paste text from here into the document via Home > Paste drop-down there are 5 paste options using each of the "clipboard" icons:"
Which are (left to right):
*AND*
Those options change depending on the top item in the Clipboard *AND* the source and destination of the item being pasted!
(e.g. if the first item on the Clipboard is an image then the only option is Picture.)
(**Remember that Win+V opens the Clipboard contents dialog)
The default Paste option (via Ctrl+V, context menu, etc.) is set via the "Set Default Paste ..." drop-down menu option (also available from Ribbon File > Options > Advanced) includes the "Cut, copy and paste" options (may have to scroll down to see all of them):

The 3rd one -- "Pasting between documents when style definitions conflict:" may be getting Caroline117 above.
Note that it mentions Style -- not Theme.
Also note the last item "Use smart cut and paste" and the "Settings..." button which opens this:

And this is all just in Word ...
I have not verified but Outlook, OneNote ... will handle these options differently
On a positive note, Word, Outlook and OneNote still seem to be handling Ctrl+V similarly and offering a Paste Options button with drop-down (see settting above) at end of pasted content:
Clicking the drop-down offers the same Paste Options as using the drop-down from Ribbon menus.
Ideally, in a larger org or department such settings, fonts, colors, styles, themes ... would all be standardized and implemented via unique Office Theme.thmx, template and setting files (differnt for each application Excel .XLTX in XLStart, Word .DOTX ...) either stored on a server or distributed with each installation of Office within the org/department.
With software that has been around this long there are countless options/features added over the many years ...

We should be able modify the font used for +body and +heading styles in the "Office" theme.
You can change the theme colors. You can even create a custom theme (body as well as heading font).
In a new message in Outlook (classic Outlook for Windows), go to the Format Text tab; in the Styles group, click Change Styles and then click Fonts. You can choose a predefined font or you can use Customize Fonts to create your own body & heading font combination.
Use the Set as Default command to save your newly applied fonts.
The corresponding options in Word for Windows are accessed via the Design tab:
