This happens in Windows 10 as well. Change color. Close app, open it and it's back to colorful. This is more than annoying.

I installed Office 2016 as an upgrade to 2013. Put the color scheme on grey (because annoyingly the awesome Black went away sometime in the preview.)
Now I have a weird issue where every time I close all of the 2016 applications and then reopen one of the applications, the theme has changed from grey to colorful. This applies to reboots or just closing them all and then later opening one back up. Oddly as well today (10/5/2015) I walked away from the computer to talk to a co-worker in the next office. When I came back, it was on colorful again. However that is the only time it has changed itself while open.
It seems to work correctly when it is set to Grey. So for instance, say I open Outlook and change the theme to Grey. When I open Word or Excel, they are also Grey as they should be.
So I'm just throwing that out there as a potential bug

Has this issue from 2016 with colours keep reverting back to original been resolved?
I'm using Outlook 2016 and this is getting very irritating having to keep changing it back every single time I open Outlook.
In our environment, we are using Office 2016 Pro Plus MSI. There is a fix me option available however we are not on Office 365 therefore we cant sign on to the cloud. I currently have a user experiencing the same issue. Her Office theme color reverts back to colorful as soon as the same or another Office app is opened. She is on Office 2016 vs 16.0.4266.1001 and her OS is Windows 7 Enterprise vs 6.1.7601. Has MS released a patch to correct this weird issue? It is not happening on most of our machines.
I tried this and it worked for me too - thanks. As you say, time will tell but so far it seems OK.
Sounds like they sent a "quick fix" to your account.
"Quick Fixes" are update to Windows or Office applications that are still in development. They have not been released to the general public because they have not been fully tested yet. They will be released at some indeterminate time in the future.
That is encouraging, there may be a general fix for the future in the foreseeable future.
With MSI installations you could run OffCat to identify potential quick fixes that have been partially released.
