I'm with you, that "improvement" totally disimproved how I use the programs on a daily basis.
You can make those suggestions at the UserVoice forums (I've run out of votes, on 2 ID's <grin>. Maybe you'll get lucky and get enough votes to make MS listen
"UserVoice.com" - MS Suggestion box sites
You can use the Office or Windows 10 "feedback" (**)applets but then your suggestions just fall into a black hole. You get no feedback from MS about your feedback.
A better place to submit this type of feedback the "UserVoice" forum. You can submit suggestions like this to the forum either by "voting" and commenting on a similar existing suggestion or by creating a new suggestion for others to vote and comment on.
It is also a good idea to provide cross posted links. Put a link back to this answers.com posting on UserVoice, and add a reply here with a link to your specific posting on UserVoice.
Pointing to "uservoice" is a wasted effort. That is just the high level identifier with no link to MS specific subsites!

Go to UserVoice, either through specific links I’ve provided below or create your own suggestions there. That is where MS is looking specifically for this type of user feedback to bring them back to reality from what-ever lala-land they are working in when they make these "improvements". Comments (and votes) like these in UserVoice helped to convince MS to roll back the "phat QAT" buttons in 2016 and to at least partially undo the 2016 changes to the way the Pen input works.
Please do copy the comments you've made here and paste them into comments in UserVoice. Also include a link to this question. If you do make a suggestion, copy the link to the UserVoice suggestion and post it back on this question so other people with the same problem can vote for it and comment on it. (You’ll get faster action that way.) Please get all of your friends and co-workers who use Office to vote for your issue!

Was this the answer you got from MS or just a wild guess?
With pinned folder I could save to another frequently-used-folder immediately. Now I got stuck for a few seconds thinking what should I do.
If they had replaced pinned folder with an exactly copy of the Explorer/Save window, I would be complaining less. I can't even change folder in one click! This is beyond ridiculous.

You don't even recognize a "new & improved" feature when you see it. They removed the "clutter" of pinned folders and replaced it with the very "neat" "add a place" in the cloud ... MS is all about the cloud. They now expect you to pin your favorite folders using the Explorer "Quick Access" feature. That ignores the idea that we might (really DO!) use different sets of folders for Word and Excel and other daily work, and don't want to clutter our Explorer UI with them!
Actually as a "late comer" you missed out on another "improvement". If you look carefully in Word you will see that the "Recent" list is now sorted by date, making it a true "most recently used" list. Except, for a lot of us (apparently including you) the pinned list is supposed to be permanent. Many of us prefer the old alphabetical sort order because we could control it using prefixes in the file name. Many people complained, and the Excel team recently "fixed" it to return to alpha order. Too bad the Word programmers haven't listened ...
For the excel team that "improvement" was a "two-fer". They got brownie points for making the "improvement" in the initial release, and again for reacting to "user feedback".

When installing Excel and Word, first thing I do is pin all the frequently used folders.
In fact, in all those folders I have a small empty Excel sheet, that I open/close one by one.
Then relaunch Excel and I could pin the 'favorite' folders easily, without too much browse-click-click-browse...
Just purchased 2016 and wanted to do the same as always and had to find out here that MS removed this handy feature.
They don't seem to have a sensible explanation for that.
Coding is too complex maybe?
