The issue is when one tries to save files. I download hundreds of files a day and this is really making office2016 unusable. It takes me tons of time to go all the way down the tree to save the file I want.

When you first open Excel There is a green window on the left that is titled Recent. This won't work there. That would be way too easy. You can only pin files here not folders. Select a file and open it. Either click the open or open recent icons on the top ( I added them to the quick access toolbar) or select File / Open and browse. Here you should be able to right click a folder and select "Pin to quick access". In the little window on the left you can scroll up and see the Star with the Quick Access header.

The one benefit of doing it this way is that the Quick Access header is there any time you browse for a file. Open Windows Explorer or File Explorer and it's there too.

    Hope this explains it better.

"Pin to Quick Access" is not an option I have when right-clicking on a folder.

    This does not make sense.

Where do you go to set your preferred Office Program?

And you can't open a folder in Excel, only a file. It's the folder that I need to pin.

Set your preferred Office Program (e.g. Excel or Word) as default to open Office (Excel or Word, or ...) files.

Associate the program to the file type:

System -> Settings -> Default Apps -> Choose Default Apps by File Type.

Open the Folder or File in Excel or Word or ....

On the TaskBar, Select the File or Folder and select "Pin to This List".

    Voila..
