In past versions I would set the printer settings for a document and it would remember it so reprints default to the last used settings. How do I set Word 2013 to do the same?
In particular I like to use double sided printing.

Are you referring to manual or automatic duplex? Word itself only supports manual, as far as I know. The ability to print duplex automatically is up to the printer.
Yes, but it would be far better for Microsoft to reintroduce this functionality into Word.
You can create a second instance of the Printer, with the Printer Properties of one of them set to Duplex and set that as the printer in Word and set the other one as the default printer in the Control Panel.

The downside is that duplex is selected when printing from other programs.
Try setting the printer to print duplex via the Control Panel>Devices and Printers screen then right click on the Printer and then left click on Printer Properties. Do that when Word is not running, or at least when the printer is not selected as the active printer in Word.
