Why don't you just say that MS is not going to do anything about this issue until it costs you money and reputation? Why do you insist on saying that the "options" you provided are suitable? Obviously, the designers of MSO365 do not have to use their applications. All you have to do is use one of your applications to realize that THEY ARE DISAGREEABLE and DIFFICULT TO READ; and the solution is to provide the clients with  satisfactory options. Most of us HAVE to use these programs because they were installed by our employers; we will soon ask them to make accommodations to be able to be productive and  work without getting sick. Then, your real clients will  come to you asking for solutions. If word gets out that your programs are bad for productivity or may increase health costs, you will not sell them. The fact is that you don't have to be a genius to understand what is happening. We are reporting a problem; the solution is to fix it!

Thanks for posting in Microsoft Community. It is unfortunate that you are unable to locate the option in Office 2013 to change the theme of applications. Let me help you with the issue.

For the Office 2013 (RTM) version you may follow the below steps:

1. Go to the File tab
2. Click on Options
3. Choose the General tab on the left
4. Find the ‘O ffice Theme’ dropdown item
5. Choose between White, Light Gray, and Dark Gray.

If you have Office 2013 preview version installed, then you have an option to change the background color by clicking on File, Options, General and under the group 'Personalize your copy of Microsoft Office', you may choose the background you wish to change to and click ok.

If you are using preview version of Office then you have a Smiley on the top right hand side of the application, you may click on it and send in your feedback.

Thanks for not actually answering ANY of the real questions asked here.  It is unfortunate that you or any other MS support person seems to care about your end customer enough to actually LISTEN to the question being asked.

For OFFICE 2013 you may follow the below steps:

1.  Provide actual themes which provide color and contrast beyond 3 shades of white
2.  Take some time to listen to the thousands of complaints about this choice and voice some empathy for the customers that would like some personalization of the Office environment that many people spend looking at 10+ hours a day.
3.  Start over and make 2013 look more like 2007 or 2010....FYI, the black theme added in 2007 was one of the MOST popular theme choices by ACTUAL END USERS of Office.
4.  Start rating MS support performance based on results, not number of times you can post a copy/pasted statement to a question that only vaguely addresses the issue.  FURTHER, how about some follow up.  No ONE ASKED where the menu was, the question was is there a BETTER option than the Virtually non-existent choices you rudely told them to go change.
5.  Just a thought here, actually READ the question
6.  Follow through?
