In my outlook app on iPhone as well as in de desktop version of Outlook there is a pop-up of Copilot 'summary' on EVERY email I open.
It's annoying the **** out of me and I want to get rid of this ai-function that I never asked for.
I have Microsoft 365 family.
In settings on the app as well as desktop version there is nothing to be found to remove this.

I have the same problem: the stupid "Draft with CoPilot" prompt appears every time I try to type anything and makes pasting text in almost impossible on some occasions - and there's NO WAY TO DECLINE OR CANCEL THE PROMPT !
This is surely a classic UX 101 FAIL: always allow the user to select what functions to activate / use.
Do better, Microsoft !
You have to click on Cancel Subscription. The option to switch to classic is there.
They don't make it easy to remove it and it doesn't go away until the date of your subscription renewal.
God bless you! May you live a long and happy life. I took your advice, It got rid of that annoying gimmick that was truly driving me nuts, and saved me a few dollars on my monthly subscription. With Microsoft you must PAY EXTRA to be tortured!
