it asks me to choose a profile. The drop down menu provides me an option to pick my old shaw.ca account, my wife's shaw.ca account, outlook.com and my shaw.ca - IMAP account

Implying that POP accounts will continue to work.
I have the same version of Outlook (Desktop version labelled "classic") with a @hotmail.com account using POP. This account has no option for OAuth2 settings.
I thought that this change was getting rid of POP accounts.
Am I able to take no action and continue receiving my emails?

You are a champion. Thanks for your patience in addressing all my issues. Also, for clarifying Authorization and Authentication.
I'm setting up the hotmail account via adding Outlook.
At the stage where I am asked "let his app access your info?" I don't want to sync but have to accept. When I pressed cancel the set up was as it said cancelled.
I think I will wait to see if I do have an issue with my hotmail account in mail.
I will add the Recovery phone number even though it is problematic when travelling abroad:-(
