Managing personal Outlook.com account settings, security, and privacy

Well, just sent and received emails using my POP Hotmail account using Classic Outlook. I had been told on this thread that I would not be able to log in to my account from today.
My big choice, if this is brought in, is, do I ditch Outlook if I can no longer use my POP account (which allows me to look at emails whilst offline)? Whilst abroad earlier this year I could not start any online sourced email programs without being online, so I could not access stored documents. Webmail Gmail, Yahoo and Hotmail all needed me to connect to their accounts online before their apps, or webpages would start.
I could go back to Thunderbird which must be much better than it was 10 years ago; back then you could import emails into Thunderbird but there was no way to export them to another email client.
I only subscribe to microsoft 365 because it has Outlook, and in a format that I want. The rest of Office I can get elsewhere & I can survive without the large storage facility of OneDrive.
Microsoft will probably be happy enough without my £59.99 each year!
