My email does not have the toggle option in the top right corner to get the classic outlook back. There is no longer the old outlook in the store either. I have also tried the steps in registry editor and that didn’t work out either.

I don't see a "About Outlook" tab under Settings->General
Hi - Dont know if you fixed this or just gave up like most but on your windows key and in your list of apps page you can go down the list and find the new outlook mail. I just uninstalled it and went up to mail and pinned that to the taskbar and it brought back the classic version.I didn't use the app with the big O in it so I don't know if that will work the same way or not. I know MS will keep reinstalling it but I will keep uninstalling it until they don't have the classic anymore. A PAIN
I use Office365 as well and there is no way to go back to the old Outlook.
HOWEVER!
I also have Office 2021 Pro. I installed it and it installs the old Outlook program. Once I finished, I logged on to my office365 account and it kept the Classic View. It's a work around that is a pain, but it worked.
if you want old one back delete the new one and download this

it will get you old one back click it download and it will work again but make sure to delete new one
