We just switched to the new Outlook and now it will not automatically capitalize like the older version would. Is there any way to turn this back on?

Until yesterday that was not possible but, today, I see that is working.

if you type something and press the space bar instead of return it will capitalize the first letter of the word. does that sort the issue?
