After researching how to get it back to how it looked, which was much more in my taste, much easier to navigate, had what I needed and nothing more, - I now see I can't get it back after it was updated.
I think i'm gonna completely disgard of this email, I liked how it looked on PC, it was dark, fast, easy to find things, now it's very complicated with a lot of options and tools i have no use for, and it's bright, with small buttons everywhere.
It's a typical thing of big coperations to do this, so it dosen't surprise me, that some people who think they know it all, make something new, to shove down the users throat, instead of being able to choose ourselves.

The ads work, though. You can tell that's the main thing they care about is charging $3 a month to look at...your email??? Which often isn't even run by them. Wild. The future is a joke.
Go to the "help" menu in the Mac client and click "Revert to Legacy" at the bottom of the list. That should do it.
I'll agree the new Outlook is a hot mess of garbage. Changing the setting to dark mode does absolutely nothing when I tried this steaming turd. None of the options do anything at all to get rid of the glaringly bright theme that starts by default. The setting page layout with the older outlook is better and allows better control that the watered down settings in the new system. Its like the difference between the settings app in Windows 8-11 vs. the Control Panel.
