I have been having issues with syncing events between my Outlook calendar on Mac and my Apple calendar application (on my MacBook Pro) for the last couple of months. Before then, the syncing worked like a charm.
I've had many calls with the Apple support team and they got it working every single time but it stops syncing again after a few hours or at most a day.
Do you have any tips on what I may need to do to resolve this issue from the Outlook side of things?
An interesting fact is that my iPhone and my Outlook calendars are syncing perfectly fine. It's just the connection between my MacBook Pro and Outlook that doesn't work

Regarding your post, would like to confirm where the event created first and does not sync?
If event first created from Apple calendar and it doesn’t sync with Outlook Calendar, check with change your Outlook for mac version from New version to legacy/old Outlook for mac and vice versa to see if it makes any difference.
- To change version from New to legacy Outlook : open outlook for Mac > Help > Revert to legacy Outlook
- To change New Outlook for Mac : Turn on - “New Outlook” button available on the top ride side.
You can also check with add another account on both app side to see if events sync correctly or not. Further for using Outlook for mac, as we have dedicated support team, which is specializing in handling issues related to Outlook for Mac. So for further assistance, we recommend you to kindly check this issue with that team. To contact them open Outlook for Mac app > go to Help > Select Contact Support or please check Contact support within Outlook for Mac
If event created from Outlook Calendar app and if it doesn’t sync with your Apple calendar app, check with re-add your affected account with automatic configuration. Also from your Apple calendar app > open your preference settings > go to Accounts > select your account > under Refresh calendar settings > set Every minute option and then check. If still same issue on Apple Calendar app, it is recommended to kindly involve Mac support team again. At this point, your kind understanding and co-operation will be highly appreciated.

No, but I will try that next time. Full system restart is traditionally my go-to when solving sync issues, but I could see the value in trying to address them more specifically via Activity Monitor. Thx!
Following up on this @Ray, tried force quitting Activity Monitor and re-opening calendar app; it did not load the new appointment. Had to go back to the Full system restart
