I have had outlook 365 for years. Nothing on my end has changed. Suddenly (as of yesterday) every time i click on New Email a pop out window opens up (and the signature within my email is HUGE. About a 48 font yet the font showing is 12) This has never happened before and it is QUITE annoying. I have searched within the OPTIONS of Outlook and I cannot find anything with the option to open a pop out window when composing a new email. So there appears to be nothing for me to check/uncheck in this regard. As far as I know i have had no updates to Outlook that would have made this happen. Has anyone else had this happen and have you figured out how to stop it?????

Wholly impertinent answer to the original question
To Everyone blaming MS Outlook. Yes, the software is buggy and yes, MS does not pay necessary attention to all the issues community is raising, but after trying all possible solutions a none found to be working, i realized that the issue is not in MS Outlook. Instead, it is an issue of a ghost double-click of a faulty switch on the Logitech mouse. The solution found on reddit works (https://www.reddit.com/r/MouseReview/comments/n12gun/solution_i_have_found_a_fix_to_the_mouse_double/) however it is only a temp solution, before the mouse/switch replacement.
VERY Anoying! I even removed recent Microsoft updates to no avail.
Very inconsistent and annoying it didn't used to do that two months ago I use a surface and even if I use a mouse or Wacom tablet touching the screen directly the emails opening Little window with tiny font... Wonder if Microsoft is doing this to force people to upgrade their Outlook platform but I'm not 100% sure has anybody been able to upgrade the Outlook platform in order to access those features that can stop emails from opening a new windows?
I'm afraid I'm running out of ideas. Let's ask other advisors and Teams users for suggestions that might help you.
They would be able to reply to this thread and share their comments.
