Hi, I noticed that all my links in my Android Outlook app open in an in build browser instead of the app, (such as youtube) This is really frustrating as I have to do other steps to find the option to 'Open in browser' so it then opens in the youtube app. This is for all links amazon, twitter etc.
Is there any way to disable this option? I am unable to find it in settings withtin the app.

Had the same issue, fixed it by reinstalling the app.
I had this issue as well but as was suggested I uninstalled the app and then reinstalled it and no more issue. Hyperlinks opened into my default browser again.

Edit: after a few hours I rebooted my phone and the problem arose again.

As I've mentioned on my last response. I would highly recommend that you use Outlook for Android's in-app support feature to get in touch with our Outlook for mobile dedicated support team. Here's an article to guide you on how to use it.
If you have any other concern, simply post back in the Community.
Would be really helpful if you could send this trail of feedback directly to that outlook android team as there are.already mutliple voices on this trail and it is far more efficient than each person doing this. MS made a change to Outlook and it ia painful and intrusive and there is no obvious option to change a flag tp stop this internal app browser. This lacks thought and is bound to upset your customers.
