I've been having the same problem. I've been using the support feature in the app haven't been any help yet. I'm the admin of my org and none of the settings have changed for my login. Previously when used this app and added an account it would ask me if I wanted to stay logged in. I've deleted everything, cleared cache and app data, uninstalled everything, and I've never seen that option again when I add my account again. When ever I login I see a bunch of screens pop-up and they disappear and I have no idea what it's doing.

I don't think entering the Beta program is a useful solution for everyone, but it is a good test case to confirm whether or not the Authenticator caused (or solved) your issue.
Regardless, a fixed version, 6.6.3, appears to be publicly available as of yesterday on the Google Play Store. It's available, non-Beta, through the Play Store now or through other channels like APK Mirror if you want it and the Play Store isn't offering it to you yet. I recommend anyone who is still having problems ensure they're running a 6.6.1+ release of Authenticator.
I can't testify to multiple tenancy problems but I can confirm that this solved the repeated sign in prompts across applications for a single enterprise tenancy.
Clearing the cache/data, or reinstalling Outlook on the phone doesn't seem to help the problem. You can set your account back up, and then few hours later, the problem returns.
Moving the authenticator app is not a solution to me, I use it for non Microsoft accounts also as well as my personal email account which is also on my phone. The account I have the issue with, is not used by authenticator app, even though it shows up in the app in gray, meaning inactive.
Removing additional MS applications is also not a "fix" to me, I need apps like Teams, Office apps, etc, for my job.
As you said, this needs to be investigated more and a fix developed. The issue is gaining traction.
We have individual users opening tickets within the Outlook app for this issue, should be open a Premier Support Case? They don't support sending screen recordings/video in the Outlook support app. We have been sending them screenshots, I think they are aware of the issue, but if the problem lies with the Authenticator app, how do we get that team involved?
I installed intune but couldn't sign in because we don't have a license. I uninstalled it. However, I haven't had a problem since I installed intune. So it sounds like Outlook for Android is having issues downloading and applying the app settings for O365.
My outlook also says I'm in a beta version. I don't remember signing up for that or know how to get the production version.
