I've never had this issue before.
The Autoupdate process is failing.
Downloads are slow, and then patching the apps (installing...) takes 5-10 minutes.
This is on a new-ish MacBook Pro i7 with 6 cores.
I'm on the Slow ring because I've been burned stung with Fast ring recently (loss of data in OneNote, specifically, but also Word/PPT keyboard shortcuts failing).
Note/Edit - it's basically stuck at "Waiting to install..."

The amount of time you are reporting does not sound out of range to me.
You can report the problem to Microsoft as it is occurring by using the Help menu in AutoUpdate. Choose Send Feedback about AutoUpdate
