I'm getting extremely jittery video despite a good connection. It looks like every few frames, a single frame from a second ago is displayed, causing both my video and other participants videos to just jitter in a really distracting way. It can't be my connection because I have a good ping & good connection, and its happening to my video as well.

Same here too - I thought for a while it was my machine, until I realised that my colleagues had the same issue and didn't complain. Glad to see this thread to show that I haven't gone mad. I may see if I can downgrade my MSTeams.
I'm having the same issue and have put up with it for a month. I'm starting to get headaches from this video problem.
I have been having the same problem in the same timeframe. The problem is only with Teams video. It happens with all video rendered by Teams, including video from my own camera (whichever one I use), video of my teammates, and shared-screen video. It jumps exactly as described, and it does it a lot. It's very annoying. My teammates report that my video looks fine to them. Only Teams video has this problem; other apps with video work fine.
I'm on a Macbook Pro, 16-inch, 2019, 2.6 GHz 6-Core Intel Core i7, AMD Radeon Pro 5300M 4 GB, Intel UHD Graphics 630 1536 MB.
Same problem for me. 2020 MacBook Air, 1.1 GHz i5 with 8 GB Ram
It's beginning to affect my job... .
