I'm getting extremely jittery video despite a good connection. It looks like every few frames, a single frame from a second ago is displayed, causing both my video and other participants videos to just jitter in a really distracting way. It can't be my connection because I have a good ping & good connection, and its happening to my video as well.

Yes, I thought it would be futile to get MS to look into this issue, but they came through. Jessen, the MS tech, requested Teams logs and detailed information about the problem and was persistent about following up. While I could backdate my Teams version to an earlier version that didn't have the problem, Teams automatically updated itself to later versions that had the problem. Finally a version that fixes the issue. I just hope this jitter problem doesn't find its way back in later versions.
My org has upgraded to that version and life is sooooo much better. Thanks for raising the issue and thanks to those at Microsoft that fixed the problem.
Hopefully everyone affected by this problem now knows there is an updated version of Teams that seems to have resolved the issue. I've been working with Microsoft on this issue since the beginning of 2023 and after several attempts released version 1.6.00.7354 which fixed the jittery video on my Mac. Hope this is helps someone.
I am back to 1.6.00.4464 now and it's all good.
