How do I scan multiple pages as a PDF file in Windows 11?

Since updating to Windows 11, the only way I seem to be able to get my scanner to work is using Windows Scan. Unfortunately, I can't see any way to scan multiple pages into the PDF I am trying to create. I used to be able to do this using my scanner's functions but since updating to Windows 11, the scanner can't seem to connect to my PC via the scanner's buttons. Does anyone know a way around this?

    This response doesn't answer the question: Windows Scan seems to be unable to scan a multiple paged document into one PDF file. It makes no sense. I want to scan and save a two-page letter, and the only thing I can do is save the two pages as two separate PDFs... Unbelievable.

    Using an Epson GT-S50 scanner that will scan both side paper. Latest MW doesn't provide the option for scanning both sides. Used Acrobat with the scanner itself set for both sides. Spending too much time trying to get some of the new gadgets to work.
