Sounds good, thanks Kim. To be clear though, the mouse isn't a big deal for me, I'm not really trying to get a fix so much as the mouse is the easiest way I found to duplicate the issue.
If anything is needed, don't hesitate to ask.

Clipboard stops to working in random time during the working day. Can't copy/paste, clipboard manager is empty. No any special actions done before this: it just stops to work in regular routine. I just have to restart Windows and hope to work for a next few hours.
It's make me crazy to restart my computer few times a day. I have complicated environment with VM's, Docker, IDE, SSH Terminals and should restart it JUST BECAUSE SUDDENLY I HAVE NO CLIPBOARD.
HOW IT'S EVEN POSSIBLE TO BREAK THE CLIPBOARD??? I CAN'T BELIEVE IT'S NOT JOKE
Windows 11 is broken! Please fix it!
I know here a lot of people with same issue. Please comment: let's make this problem visible to MS.
Please no generic advises about restart explorer, dism/sfc, troubleshooting and reinstalling my OS.
All of this was tried many times and doesn't solve this deep Windows bug.
My system information:
Windows 11 22H2 (x64), build 22621.2715, all the updates installed (Nov 2023)
Ryzen 7 5800H, 32 Gb RAM

UPDATES:
SOLUTION #1 (JUNE 2024): confirmed and tested
As I noticed before, clipboard issue was always after my computer was left for some time switched on. During this my screensaver was shown and SOME BACKGROUND TASKS performed. This caused the issue 100% of time! I was trying to find and disable background tasks - but it doesn't help.
So, here's my solution: don't let PC to get idle. I've installed Caffeinated utility and keep my PC always awake, even when I'm go out for a few hours or night. AND IT WORKS! For 1 month already no more Clipboard Problem, no any restart! So I recommend to try this method.
SOLUTION #2 (doubtful: works for some)
Discovered by Glen Decker, instructions by Kim-LarryPapp
I hope it can help shine a light. You can follow the steps below. Some things to note, I've placed keystrokes in square brackets to indicate the keyboard touches, and the 'WIN' key refers to the Windows Key on the keyboard. (e.g. [ctrl+alt+del])
UPDATE FROM SEPTEMBER 2024:
From the moment I discovered solution #1 I have no issues with clipboard at all - for 3 months in a row!
Just using Caffeinated utility or PowerToys Awake - yes, not fix, but stable workaround. At least I can do my job while Microsoft ignores this issue.

Glen, I'll do my best and give it a try about the mouse. I had a very difficult time convincing them that many other users were having the same copy and paste issues as me. It took me almost 3 months to get escalated to level 3 support, once I got there the support was amazing, I was finally talking to somebody on the same level of me. As I said before I was a mainframe incident manager for a very large automotive company that supported Worldwide operations and grew up in IT, so I offered any assistance they may need to fix this issue. Since I have two P/C's one Windows 11 and one Windows 10 I was able to perform any restores, re-formats, or anything they asked to gather the necessary logs for them to review. Since you provided me with a fix, I'm now starting to move my data to the Windows 11 P/C. Just received a response this morning, I'll ask a favor and ask they look into your mouse issue. Below is their response. Thanks again

Excellent, and no worries. I'm glad I could contribute. Hopefully they can take the info and catch the bug. Since you have the open line of communication, would you mind passing the mouse part? I believe that will be their easiest method to reproduce the error.
Someone is going to have to dig deep into the pockets of the Microsoft budget, buy the Logitech M720 Triathlon Multi-Computer Wireless Mouse, and map a couple of keystrokes. You guys were talking about 72 hours, but mine would fail after 10-15 minutes!
It's my suspicion that the IoT capability of the service (bluetooth) combined with the mapping process (utilizing the ClipSVC in the back (assumedly)) would trigger the fight. Given the properties of the CD Platform, after the fight, the platform reboots, but something isn't cleaned up. Unfortunately, per the settings, after two fails, it throws in the towel.
While we're at it, have them do this on an device with onboard Intel and a separate NVIDIA graphics card so we can figure out why the OS becomes unusable. ;)
Thanks again Glen, still no issues. I sent your information on to Level 3 and the engineers, I'll let you know their response. Amazing work!
Thanks again
Dean, I received this procedure from Glen Decker, give it a try and let me know if this fixes your copy and paste problem. I made the change and I have had no problems for 5 days now. It appears to fix the problem and very easy to apply.
