I am seeing this problem too. I have set up a new phone and have no option to remove the old phone from the list. Seems like a pretty basic feature to miss add device .... remove device.
how to remove the device on phone link? It only shows me the disable/enable button.

I hope someone from Microsoft is monitoring this question. Functionality to remove device was removed in an update about 3 months and is still missing.

My Phone Link on Samsung Galaxy S24 Ultra does not look like above and in settings I do not have a remove option.
