The new Default App Setting is way to advance and confusing which is unecessary complex for home users. I wanted to change the default file type for Photos and Videos but I there is no jpg, png, mp4 types of file type showing when searching to change it's default app. Also I can't change the default app using explorer open with because the checkbox for always use this app is missing for both Photos and Videos. Also there is no Open with the file property too. Help Me Anyone.

There are 3 simple command you have to give out in admin mode. Please be so kind to read back. It's not hard, is you already found your way here...
Just finished installing Windows 10 and putting my stuff back in. Problems with images and videos are gone. I had to stop using Thunderbird email because it was locking up in 11. Working like a champ in 10. Things just work and I know how to find and do stuff.

I understand, so many frustrations, simple and complex. I.E. when you edit a file it sometimes puts the ribbon with a few of the 'most used' items like delete, at the top of the window and sometimes at the bottom. This is not an improvement. W10 the info (much more) was always at the top as it should be.
There are lots more issues but I'm back on W10 and happily can't remember them.
Bad mistake "upgrading " to Windows 11. images and videos stopped opening. After reading this thread and several other. I managed to fix the image problem by uninstalling photos. Re installing it and then resetting and restoring. Images work as normal.
Videos.... nope.. can't change association to use another program. Clicking on the small arrow or change button, depending on which method I try, doesn't open an option window.
Giving up. Going back to Windows 10.
Microsoft need a new marketing slogan for this POS. Use this one....
