I have Surface Prox with Italiy country, i checked for updates to Windows 11 in my Windows Update and there is a prompt opinion that tell me to check if the pc can be updated on windows 11. This prompt is called "Prepare for Windows 11" and redirected me to the Microsoft site, i checked and i have all requirements. So, Should i have to wait that the update to W11 will appear into windows update or there is another method to update the surface pro x????

Waiting for it to show up in windows update is definitely the easiest way to upgrade to Windows 11. There is just no telling how long you'll have to wait. And yes, you will definitely get a note in windows update about the upgrade when it is made available for your device.
I've been told using the Media Creation Tool (2nd option on that linked page) to make a bootable USB does work to upgrade the Surface Pro X, but I haven't tested that myself. For some reason the Installation Assistant (first option on that page) is not supported on ARM PCs.
