I completed PL-7008 Day 1 - 103230 training. I was then off for a couple of weeks and had abusy week. Now when I try and run the lab environment and follow the instructions, the instructions do not match the copilot studio and I am unable to complete the lab. I would really like to complete this lab.

This is a factor of how fast Copilot Studio is evolving,
You may need to switch back to the standard harness - in the Agents pane, select Agent (Standard)
Check the GitHub repo https://github.com/MicrosoftLearning/mslearn-copilotstudio for changes and raise an issue for your problem if there is another option
