Uninstalling the Copilot app from Windows would not remove AI features that are part of Microsoft Edge or Bing.
From what you described, the important distinction is where the Copilot result is appearing. If it appears directly on the Bing search-results page, the Copilot Mode, sidebar, and context settings mentioned in the other answers are controlling different Edge features.
I could not verify an official Microsoft setting that specifically disables AI-generated results within Bing Search for a consumer account, so I would not recommend continuing to look for the missing Copilot Mode or App-specific settings.
If you want to avoid those Bing results, the practical option is to change the default search engine used by Edge. In Edge, open Settings > Privacy, search, and services > Search and connected services > Address bar and search, then choose another provider under Search engine used in the address bar.
