If you still want to keep Copilot available but simply stop it from getting in the way while you type, I would avoid disabling Copilot completely.
In OneNote for Windows, first close the Copilot pane using the X in the upper-right corner of the pane.
If what is bothering you is the small Copilot entry/icon that keeps appearing on the page, recent versions of OneNote include a separate setting for that:
File → Options → Copilot
Then turn off:
Show Copilot icon on OneNote pages
That hides the on-page Copilot entry without disabling Copilot itself, so you can still open Copilot later from the ribbon when you actually want to use it.
I would not turn off Enable Copilot unless you want Copilot disabled entirely, because that removes the functionality rather than just getting the UI out of the way.
If the Copilot pane itself keeps reopening automatically after you close it, please let us know your OneNote version/build and whether this happens every time OneNote starts or only when opening certain notebooks/pages. That would be a different behavior and may be worth troubleshooting separately.
