I have been adding guest users but they are only getting access to two apps, outlook and Sharepoint. How do I get them access to the other apps?

Not every app supports the B2B guest user framework. And the ones that do might have their own/separate controls to enable guest access (i.e. Teams).

Teams, Powerpoint, Excel, Word, and whatever else guest users can get access to in order to collaborate
Guest users don't get full access to paid Microsoft 365 apps such as Word and Excel just by being added as a guest. They can access and collaborate on files shared with them through SharePoint, OneDrive or Teams, but they don't have the same Microsoft 365 app access as a licensed member user.
For Microsoft Teams, guest access is supported, but the guest must be added to a Team and guest access must be enabled in the Teams settings. https://learn.microsoft.com/en-us/MicrosoftTeams/guest-access
