Welcome ToyotaGR86,
What you're seeing is expected with the recent Copilot app changes. Microsoft has been moving users to an updated Copilot experience and, for personal accounts, the older Copilot and Microsoft 365 Copilot experiences are being merged into a single app. During this transition, chats and content are moved to the updated Copilot app.
Regarding your question, there is currently no user setting to opt out of the migration and continue using the previous Copilot app once your account has been moved to the updated experience. The updated app is now the supported version for personal accounts.
As for the "daily chat limit" message, free users can continue using Copilot, but usage is subject to capacity and daily limits. When a limit is reached, you can either wait for the limit to reset or choose a paid Microsoft 365 subscription, which provides higher usage limits.

If you would prefer the previous experience to remain available, I recommend submitting feedback through the Copilot app by selecting your profile picture and using “Send feedback”, your feedback will be reach out to the right teams, they will improve for the future changes.
I hope this helps clarify what happened.
